En esta asignatura se pretender dar, en primer lugar, una visión general de los aspectos básicos (química, física, estructura, alteración) de los alimentos y de su procesado. A continuación, se incidirá en aquellos temas de mayor interés para un futuro graduado en Biotecnología en el campo de los alimentos, como son el papel actual y futuro de los microorganismos y enzimas en la obtención y modificación de los alimentos, y los avances más recientes para la obtención de alimentos genéticamente modificados con propiedades de interés.$$bThe food sector is very important from the economical point of view, and is one of the industrial areas where Biotechnology has played and still plays a pivotal role. In this course, firstly, a general view of the basic aspects (physical-chemical aspects, structure, spoilage), of foods and their processing will be offered.
